Each bottle or can is numbered. Each is filled and labelled individually, and individually checked.
Olive fruits are strictly hand harvested between mid October and mid November in order to get extremely low acidity fruits. The olives are cold pressed, mostly in a temperature range of 18-20 Celsius degrees and never more than 22 degrees.
The entire production comes exclusively from the 650 olive trees of the farm. The variety of the olive trees is Rajo, Leccino, Morraiolo and Frantoio. Our olive oil is the produces from a mix of these 4 kinds of olives. It is the different kind of olive percentage during the pressing process that gives the oil its taste and flavour. These trees are part of three olive groves differently sun exposed on the slopes of a 500 meters high hill in the very heart of the Umbria countryside. The larger grove is on the northern side, the others are on the western and southern ones. Yearly production of oil ranges from 1200 to 2500 liters, depending on seasonal condition of harvesting.
Our bottles and cans only contain non filtered oil and nothing else. During the winter the oil freezes at 4 degrees Celsius approximately. As time passes the product stabilizes, and as a result it produces sedimentation. This process is completely normal, natural and safe. It does not have any effect on your health. The product can be filtered on request. Store it in a dry place sheltered from direct solar light.

In its more than one hundred years of life, the farm went through several changes. It no longer makes wine but it sells its grapes (Sagrantino and Sangiovese) to local wine producers. It is no longer a cattle farm, neither for pigs nor for cows, despite having been a leader in cattle breeding in Umbria for many years till the 90s, especially for Chianina cows. Instead, its fruit production for traditional jams and jellies has been strengthened. This includes peaches, cherry berries, apricots, plums, pears, apples, strawberries, blueberries, raspberries, wild blackberries and currant berries.
But our main production remains olive oil from the 700 olive trees of the grove.
